Our Dear Sun


They used to call you Aten
You golden yellow sphere
You reign supreme above our heads
Your power we must fear.

Your distance from our little earth
Is said to be just right
Not too distant or to near
For just enough heat and light.

You control the rate of flow
Of surface energy
Wind and clouds and rain and snow
And currents out at sea.

You also exert your control
On the way we work and play
From icy roads to beachfront camps
Or the sailboat in the bay.

Some of us are overcome
By the power of your rays
Exposed cells are baked and burnt
On those lovely sunny days.

My dear majestic Aten...
We'll always need your energy
To sustain our biosphere
So rise up! EVERY MORNING, star!
We're so glad you're still up there.

Belize Food

Belize has a diverse cuisine ranging from seafood to traditional home cooking. The staple of Belizean cuisine is the classic rice and beans of white rice and red kidney beans. Another traditional dish is the Stewed Chicken, this is one of the plates that every visitor should experience. This delectable dish has a secret to be prepared an is to brown the chicken that's been rubbed with a paste called "recado" and sprinkled with pepper, salt and garlic before adding water, a dash of vinegar and chopped onions and sweet peppers. With this method you will taste the greatest flavor. Another delicious plate is serre la sus, this rich and tasty soup contains fish lightly simmered in coconut milk with onions and spices and served with a mixture of beaten, boiled green and ripe plantains and wafers of cassava bread. Some of this dishes are served with ‘’tortillas’’ made from corn.

Remember to taste all of these delicious dishes when you come to Belize.

The Beach


Squat, unshaven, full of gas,
Joseph Samuels, former clerk
in four large cities, out of work,
waits in the darkened underpass.

In sanctuary, out of reach,
he stares at the fading light outside:
the rain beginning: hears the tide
that drums along the empty beach.

When drops first fell at six o'clock,
the bathers left. The last car's gone.
Sun's final rays reflect upon
the streaking rain, the rambling dock.

He takes an object from his coat
and holds it tightly in his hand
eyes on the stretch of endless sand.
And then, in darkness, cuts
his throat.
